Grilled Mushrooms with sliced Peppers
Soft grilled button mushrooms, seasoned with peppers julienne, for a special, extremely moreish flavour.
The precious ingredient, the button mushrooms, are simply grilled then seasoned with a mixture of peppers cut into thin strips, of all colours. They are delicious eaten as they are, drained from the oil and served in a small bowl, as well as quickly tossed in a pan and served with croutons or Carasau bread. They are best savoured with Italian aged cheeses, such as sweet Provolone, Caciocavallo or Canestrato Pugliese.
For an aperitif, the recommended pairing is with a light, fruity red wine with low tannins, such as Grignolino of Monferrato, to be able to savour the whole bold flavour of the peppers and the whole softness of the mushrooms, or perhaps a not overly structured white wine, even aromatic, such as Albarola of Cinque Terre.
