Oil-Pickled Button Mushrooms Polli
A great classic, oil-pickled button mushrooms! Everyone likes them, they are a fantastic hors d’oeuvre and a top ingredient of any aperitif at home. Soft and appetising, their flavour is inimitable, one leads to another and there are never any leftovers!
The mushrooms, the precious ingredient, are prepared with a simple and tasty recipe, pickled in sunflower seed oil which preserves all their natural flavour. They are excellent eaten as is, drained and arranged in a small bowl, or even tossed quickly in a pan and accompanying croutons or Sardinian Carasau flatbread, and offer their best with traditional Italian cold cuts and seasoned cheeses, such as Sardinian Pecorino or an excellent Parmigiano Reggiano.
They are excellent as an ingredient of summer salads, with sweet corn and ripe cherry tomatoes, also due to their low calorie count. They have a long shelf-life... so always keep them in the pantry! There are countless opportunities to use them and they are all worthy of such pickled mushrooms!
