Barley and soy ragù balls


250 gr barley
1 jar Bolognese ragù with SOY
80 gr toasted hazelnuts
1 can tomato purée
1 onion
2 garlic cloves
1 boiled potato
1 celery stalk
Nutmeg to taste
Oregano to taste
Bread crumbs as needed
Extra virgin olive oil Salt


Chop the toasted hazelnuts, ½ onion, garlic, celery and potato in a food processor. Pour the mixture in a bowl and add the barley which you previously cooked in salted water. Add the nutmeg and oregano. Combine well and add salt to taste. Form balls, roll them in the bread crumbs and fry them in plenty of oil. In the meantime, make the sauce by frying the ½ onion with the garlic in a pan then add the Bolognese ragù with SOY. When done, arrange the balls in the sauce and cook for another 5 minutes.
