Frittata with bell peppers and cheese
1 jar sweet and sour bell peppers
200 gr grated hard cheese
Extra virgin olive oil
Boil the potatoes and when done mash them in a bowl. Properly drain and chop the peppers and add them with ¾ of the grated cheese, the eggs and parsley. Mix all the ingredients well. Add salt and pepper to taste. Heat some oil in a high pan and add the mixture. Cook until the surface is golden. Sprinkle with the rest of the grated cheese and serve.
