Light rice salad
Ingredients for 4 people
300 gr basmati rice
150 gr cherry tomatoes
100 gr Polli No Oil Boretta shallots
100 gr Polli No Oil grilled Bell Peppers
100 gr Polli No Oil grilled button mushrooms
100 gr Polli No Oil Puglia artichokes
150 gr cooked ham
Cook the rice in plenty of salted water for about 8 minutes, drain it, cool it under running cold water and dress it with a drizzle of oil.
In the meantime chop all the ingredients into small pieces, add them to the rice and mix. Chill the rice salad in the fridge until half an hour before serving.
