Ingredients
- 10 courgettes
- 1 jar Sicilian-style tomatoes
- 250 gr fresh ricotta
- a handful of walnuts
- 1 garlic clove
- 5 basil leaves
- Extra virgin olive oil
Preparation
Use a vegetable peeler to cut the courgettes into spaghetti and blanch them in salted boiling water for a few seconds. In the meantime, in a food processor combine the sun-dried tomatoes, the garlic clove, the walnuts and basil. Pour the mixture in a bowl and add the ricotta and oil. Combine all the ingredients well and dress the courgette noodles.
