Mushrooms, the valuable ingredient, are simply preserved in vegetable oil, to retain all their flavour. They are excellent eaten as they are, drained and served in a small bowl, or even tossed quickly in a pan and accompanying croutons or Sardinian Carasau flatbread, and give their best also with traditional Italian cold cuts and seasoned cheeses, such as Sardinian Pecorino or an excellent Parmigiano Reggiano.
They go wonderfully well with roast or grilled meat. Due to the similar aroma, they also add flavour and personality to simpler, everyday meat or fish dishes. The flavoursome recipe makes them an easy and tasty side dish: always keep a jar in the pantry.
