Frittata with bell peppers and cheese
Preparation

Boil the potatoes and when done mash them in a bowl. Add the pesto alla calabrese with ¾ of the grated cheese, the eggs and parsley. Mix all the ingredients well. Add salt and pepper to taste. Heat some oil in a high pan and add the mixture. Cook until the surface is golden. Sprinkle with the rest of the grated cheese and serve.

  • 1 jar pesto alla calabrese
  • 200 gr grated hard cheese
  • 2 potatoes
  • Chopped parsley
  • Extra virgin olive oil
