Giardiniera has humble roots as it was originally a way of preserving fresh vegetables harvested over the Summer so they could be eaten during the Winter when the vegetable gardens were empty. Nowadays, Giardiniera is the cream of the crop when it comes to making a hearty Insalata Russa, delectable aperitifs for friends and family, or simple antipasti loved by absolutely everyone. Both the ingredients and sides are low in calories and full of flavour. To make a delicious Insalata Russa, for instance, pop open Polli's Giardiniera, drain, and carefully chop the contents into small cubes, releasing all the vegetables natural flavour. Is your mouth watering yet? For a simple homemade mayonnaise, mix extra virgin olive oil, fresh eggs, and some lemon juice. Add it to the chopped Giardiniera with boiled cubed potatoes and peas. Mix well. Let it rest for about an hour, allowing all the flavours to infuse. If you want to make your Insalata Russa even more appetising and suitable for dinner with friends, add a sliced hard-boiled egg.
