Tomatoes are a wonderful vegetable, its divine taste has always been appreciated and the tomatoes growing in the Mediterranean area are the best. We let them dry in the sun then process them, only when they have absorbed all the flavour of the end-of-summer sunshine. They are soaked in water to soften, then dried and seasoned with garlic and oregano, extra virgin olive oil and a pinch of salt and sugar.
